Acai Coconut Water Smoothie

So, I ran 20 miles last Thursday…and it was actually a good run! I feel like I’ve been complaining lot this marathon season about being exhausted, feeling hungry all the time, and being borderline injured. I definitely needed this run to get myself back on track. It was a beautiful fall day, and I planned my route to hit all of my favorite running spots I’ve found in NYC.

And let me just say, running in NYC is awesome.

(I promise I’ll get to the smoothie in a minute.)

I don’t know if it’s just me, or if it’s a long-distance running thing in general, but I can’t seem to focus on anything in particular on a long run. In theory, spending hours and hours running by yourself should give you a lot of time to think! But for some reason, I can’t make even the simplest of decisions while out on a run. Not even what I’m going to wear after my run, or what I’m going to eat. My mind just quickly wanders from one thought to another.

I’ve learned the hard way that I have to plan out at least the eating part before I run. I know it’s not true for everyone, but I’m usually pretty ravenous after a long run. I usually first crave something fruity and sweet, like a smoothie…and then I crave a Chipotle burrito. Kind of random, but it works for me.

If I don’t plan ahead, I’ll probably definitely wind up buying a $10 juice or smoothie at some fancy juice bar because I can’t make rational decisions during or immediately after a long run. That’s where this acai coconut water smoothie comes in.

Acai Coconut Water Smoothie

It’s a simple combination of coconut water, frozen acai puree, frozen banana, and frozen strawberry. I made sure I had all the ingredients on hand for after my run, so all I had to do was throw it in a blender. It’s refreshing and energizing, which is exactly what I need to get back to a normal day after such a long workout.

Acai Coconut Water Smoothie

Yield: 1 16-oz smoothie

Acai Coconut Water Smoothie

Ingredients

  • 1/2 packet (1.75 oz.) frozen, unsweetened acai puree (see note)
  • 1/3 frozen banana
  • 1/4 cup frozen strawberries
  • 10-12 ounces plain coconut water (use more or less depending on how thick you want it to be)
  • 1/2 tablespoon chia seeds (optional)

Instructions

  • Place all ingredients in a blender and blend until smooth.

Notes

I used Sambazon’s acai puree.

    I’m SO glad your 20 miler went well!! Having it behind you is the BEST feeling. I need something fruity after a long run as well, and this smoothie is almost certainly going to be get some heavy rotation time in the future!
