Coconut Date Balls

Coconut Date BallsMarathon training has made me extra snacky lately, so I’ve been looking for healthy things that I can have on hand or bring to work when hunger strikes. Enter the Daily Garnish’s Coconut Date Balls. They might not look like much in the pictures, but I highly recommend you give them a try.

The recipe couldn’t be simpler. You basically put oats, dates, unsweetened coconut, roasted pumpkin seeds, orange zest in the food processor, roll into balls, and roll them in coconut. There’s no added sugar. The sweetness of the dates is all that’s needed. They taste sweet and nutty, and the flavor from the orange zest brightens them up. They almost remind me of oatmeal cookie dough.

I modified the recipe ever so slightly to include chia seeds, my new favorite ingredient. They’re loaded with omega-3’s and fiber, and are mild enough in flavor that they can be used in almost anything.

I also don’t own a food processor, so I had to use my vitamix instead. I’m not sure if it was because of that or the chia seeds, but mine required a little more water than what was in the original recipe.

I’ve been eating these as a work snack, pre-workout snack, and even dessert. Next time I’m making a double batch!

Coconut Date Balls

Ingredients (serves 16)

  • 1 cup rolled oats
  • 1 cup unsweetened dried coconut
  • 1/4 cup roasted pumpkin seeds
  • 1/4 cup chia seeds
  • 12 pitted dates, chopped
  • 1 teaspoon vanilla extract
  • 1/4 – 1/2 cup water
  • Zest of one orange
  • Pinch of salt
  • Extra coconut for rolling

Instructions

Coconut Date Balls

Add the oats through salt to a food processor or blender. Pulse until the the mixture gets chopped. Slowly add the water, a little bit at a time, until the mixture comes together and is a little sticky. Roll the mixture into balls and roll each into the extra coconut.

I store mine in the refrigerator, but they could also be eaten at room temperature.

    Have you tried the coconut cream pie flavored larabar? I bet these would taste similar, but these actually sound better because of the orange zest!
