Beet, Orange, and Ginger Smoothie

I’ve been loving my morning smoothies so much that I recently tried to give up coffee to try to simplify my morning routine. Spoiler alert: I lasted a day and a half.

I was already down to just a small cup in the morning (most of the time), and I thought it would just make my life easier to not be so dependent on it. I tried the same thing a couple of years ago, but wound up drinking 2-3 earl gray teas in the morning…which kind of defeated the purpose. This time, I was determined to quit cold turkey.

Well, I didn’t last long at all. I was so miserable that afternoon, so I let myself buy a green tea on my way to class. I tried again the next day and my caffeine headache got worse and worse as the day went on, even though I don’t usually have caffeine later in the day! I finally caved. Matt thought the whole thing was a silly idea in the first place, and got a good laugh when he got home and I was holding a mug of coffee.

So…I’m back to my routine of breakfast + coffee + smoothie. I’ve mostly been alternating between my green smoothie and this beet, orange, and ginger smoothie.

Have I mentioned that I love beets? I’ve been especially loving juices made with beets lately, and since I don’t own a juicer (yet…), I started using raw beets in my smoothies. I find that they blend just fine when I dice them up finely. (If you don’t have a high powered blender, you might want to lightly steam or grate them).

If I’m planning on making these all week, I simply dice up all the beets on Sunday and put them in the freezer so they’re ready to go when I need them.

The only other components are a seedless orange and lots of fresh ginger. It actually ends up being surprisingly sweet with just the beets and the orange, so I think it’s worth a try if you haven’t jumped on the veggie juice/smoothie bandwagon yet.

Beet, Orange, and Ginger Smoothie

Yield: 1 large 2.5 - 3 cup smoothie

Beet, Orange, and Ginger Smoothie

If not using a high-powered blender, make sure to either finely grate or steam the beets.


  • 3/4 cup diced beets, preferably frozen overnight (see note)
  • 1 seedless orange, peeled and quartered
  • 1 heaping tablespoon roughly chopped fresh ginger


  • Place all the ingredients in a blender. Add enough water to cover and blend on high until completely smooth, adding additional water if necessary. Serve right away.


If you don't freeze some of the ingredients ahead of time, just substitute ice for half of the water to make sure the smoothie stays cold as it blends.
