Quick and Easy Garlic Shrimp

Garlic ShrimpGarlic shrimp are one of my favorite
Spanish tapas, and have become sort of a go-to dish for me. I can hardly call this a “recipe”; it’s more of a cooking method that is incredibly easy and basically fool-proof.

I grew up eating garlic shrimp as a tapa, and my mom and I to this day make a lot of variations on it. This most recent one worked as a wonderful side to an otherwise vegetarian meal. I simply combined the shrimp with plenty of olive oil, chopped garlic, salt, pepper, and chili flakes. I set it aside to marinate until the rest of the meal was just about ready, and then popped it in the oven until the shrimp were just cooked through. A little lemon juice at the end brightened up the flavors and made this “side dish” a star in its own right.

Quick and Easy Garlic Shrimp

Ingredients (2-3)

  • 3/4 lb medium shrimp, peeled and deveined
  • Handful of chopped parsley
  • 3 cloves of garlic, chopped
  • Pinch of chili flakes
  • Salt and pepper, to taste
  • Olive oil
  • Fresh lemon juice


Preheat the oven to 400 degrees.

Combine the shrimp, parsley, garlic, chili flakes, salt, pepper, and a generous amount of olive oil in an oven proof dish, or cazuela. Marinate for a little bit, or until just about ready to serve. Bake for approximately 10 minutes, or until the shrimp are just cooked through. Finish with a touch of fresh lemon juice.
