It’s a little embarrassing how many recipes I pin on Pinterest and how few of those I actually make. I’m trying to change that.

I’ve been in sort of a cooking rut this month, so I finally turned to my Pinterest boards for some inspiration last week. I was looking for some easy and cheap things to make for lunch when I come back from class crazy-hungry (lecture until 12:15 + an hour and a half commute home = one hangry Colleen.)

The smashed white bean and avocado sandwich I had pinned from Real Simple seemed perfect.

The recipe was quick and easy enough that I had time to make sandwiches for Matt and me AND photograph before I hit my hangry threshold. I’d call that a win.

Most importantly, this was one delicious sandwich. I added a little fresh lemon juice because I just love the combination of white beans, lemon juice, and olive oil. The bean spread on its own was amazing, but was brought to a whole new level with the creamy avocado, crisp cucumber, and thinly sliced red onion. This sandwich is definitely staying in the lunch rotation.

Yield: 4 sandwiches

Smashed White Bean and Avocado Sandwich

Slightly adapted from Real Simple

Ingredients

  • 2 15-ounce cans white beans, rinsed and drained
  • 2 tablespoons extra virgin olive oil
  • Juice of half a lemon
  • Salt and freshly ground black pepper, to taste
  • 8 slices multigrain bread, toasted
  • 1 small red onion, thinly sliced
  • 1 cucumber, thinly sliced
  • 2 avocados, pitted and thinly sliced
  • 5 ounces arugula or sprouts

Instructions

  • Combine the beans, olive oil, and lemon juice in a medium bowl. Roughly mash until it comes together but is still a little chunky. Season with salt and pepper to taste.
  • Divide the bean mixture among four slices of the bread, spreading in a single layer. Top each with some red onion, sliced cucumber, avocado, and arugula or sprouts. Season with additional salt and pepper. Top with the remaining slices of bread and serve.
